Recipe of the Week

It feels good to eat well and healthy.  Yet, eating healthy can sometimes be a challenge.  Having a collection of simple, nutritious recipes on hand can help alleviate meal time anxiety.  Take a look at this recipe for inspiration.  It's great for breakfast, lunch, or dinner!

Veggie Frittata
 
2 cups whole-grain bread crumbs
2 cups of diced uncooked spinach
1 cup of grated zucchini
1 medium red onion
1 cup of sliced mushrooms
2 cups grated Parmesan or mozzarella cheese
12 eggs
1 cup milk
garlic salt and pepper to taste
 
Preparation

Preheat the oven to 400 degrees.  Grease a 13"x 9" baking dish.  Line the dish with bread crumbs, then add the veggies topped with 1 cup of the cheese.  In a separate bowl, beat together the eggs, milk, garlic salt, and pepper and pour the mixture over the cheese.  Bake for 25 to 30 minutes.  Top with the remaining cheese and bake until the cheese is golden brown.

Special addition

Garnish with fresh rosemary sprigs or mix the chopped leaves in before baking.
